Tiramisu
Dad’s tiramisu recipe.
Ingredients
- Large mug of coffee.
- Granulated sugar (around 6 tsp).
- 2 shots of amaretto.
- 4 Fresh eggs.
- 500g Mascarpone cheese.
- Savoiarde biscuits.
- 1/2 tsp lemon juice.
- Coco powder.
Method
- Combine the coffe, amaretto, and two teaspoons of sugar. Mix together then set aside to cool completely.

Separate the egg yolks and whites into two separate bowls.

Whisk the egg whites together until soft peaks form, adding two teaspoons of sugar towards the end of the whisking process.

Whisk the egg yolks together with 2 teaspoons of sugar until expanded and thickened to a pale yellow consistency, then stir in the lemon juice.

Split the 500g pot of Mascarpone between the 2 bowls and gently whisk into the egg until fully incorporated. Make sure the mascarpone is at room temperature, as it will be easier to blend it in.

Get sufficient Savoillarde to create 2 layers in the serving dish.
- Dip each biscuit into the coffee mixture for a MAX of 3 seconds. Drain each biscuit back into the coffee mixture before putting the first layer into the dish.

Pour the egg yolk over the first layer of biscuits and smooth it down gently with a spatula.

Add the next layer of dipped biscuits then pour the egg white mix over the top - level it off with a spatula.

Finish with sieved cocoa powder, cover and refrigerate for at least 4 hours (better the next day). Eat within 4 days.
